You can get around most of the currently enforced 'amount_paid' = 'product_catalouge_price' checks by changing the currency to a different denominator (a currency of lower value).

Does anybody know what form (if any) variable paypal returns the used currency value in? Or is it another custom I'll have to send through.

The IPN field "mc_currency" specifies the currency. New amount fields were created so that merchants with existing IPN implementations did not need to revise their scripts to prevent currency tampering.

So is it just the 'mc_currency' that will read USD or GBP etc or is there a different variable to 'payment_gross' (as with the old $ transactions) for UK £?

payment_gross will only contain an amount that is USD. mc_gross is present in all IPNs in an amount specified by mc_currency.
